Description

Currant bushes are full with fruits in my maternal grandmother's yard and she gave me a box of red and a box of black currant and also shared this recipe with me.
So i gave it a try. It didn't come out so great as granny's one, but maybe yours will also succed.

For an approximately 30X20cm pan:
For the pastry:
40dkg white flour
15-20dkg butter or shortening
10dkg crystal sugar
5 egg yolks
zest of one lemon
1 teaspoon of baking powder

For the topping:
the remaning gg whites
two palmful of fresh currants (
(granny uses red only, but i mixed black and red currant)
about 30dkg of powder sugar (it depends on how sweet you want the topping to be)

First mix the ingredients for the pastry, work it well and put in a lined pan. (You can simply push it in the pan with hands or using a rolling pin.)
Bake it for about 20 minutes in oven (gas level 4), until the surface gets a bit dried.
Meanwhile beat the egg whites, then add the powder sugar gradually and finally the washed and dried fruits.
Line this cream over the almost ready pastry and put back to oven. Bake until the cream gets golden rosy colour. (This takes approximately 10-15 minutes, depending on oven)
